متخصصان هشدار دادند که سيب زميني هاي سبز بطور بالقوه حاوي موادسمي طبيعي موسوم به «گليکوالکالوئيدها» هستند که مي توانند سلامت عمومي را به خطر بيندازند. اما خبر خوب اينست که مي توان براي از بين بردن کامل اين ماده سمي و خطرات آن، قسمت بد يا سبز سيب زميني را جدا کرده و دور ريخت. علائم بيماري زا معمولا بين هشت يا12ساعت بعد از هضم بروز مي کند که شامل آشفتگي هاي روده اي، معده اي و يا حتي اختلالات عصبي هستند. علائم خفيف ناشي از مصرف قسمت هاي سبز سيب زميني همچنين شامل سردرد، سرگيجه، درد شکم، تهوع، استفراغ و اسهال هستند. ساير علائم در صورت شدت مسموميت عبارتند از احساس خستگي، گيجي، آشفتگي رواني، لرزش و توهم. اما از آنجاکه علائم بين مجموعه اي از بيماري ها مشترک هستند، در اين زمينه ممکن است تشخيص هاي اشتباه رخ دهد. اين پژوهشگران توصيه کرده اند که کشاورزان و توليدکنندگان نيز به منظور پيشگيري از بروز چنين مسموميتي بايد در عمليات هاي قبل از برداشت و پس از برداشت محصول دقت لازم را به عمل آورند. گليکوالکالوئيدها نوعي ماده سمي هستند که در سيب زميني ها بطور طبيعي توليد مي شوند و خواص ضد باکتريايي، آفت کشي و قارچي دارند و احتمالا بعنوان يک مکانيسم حفاظتي در برابر حمله بيگانه ها براي مراقبت از گياه عليه آفت ها و بيماري ها تکامل يافته اند.
